*3  A RECENTLY COOKED DISH (PUREED BREAD-TYPE DISH) WAS OBSERVED TO BE IMPROPERLY COOLED--IT WAS LEFT OUT AT ROOM TEMPERATURE. IN ADDITION, NO LABEL WAS OBSERVED ON THE FOOD ITEM. PROVIDE FOR ALL POTENTIALLY HAZARDOUS FOODS TO BE COOLED FROM 140°F TO 70°F WITHIN 2 HOURS AND FROM 70°F TO 41°F WITHIN 4 HOURS FOR A TOTAL COOLING TIME OF 6 HOURS. IN ADDITION, POTENTIALLY HAZARDOUS FOODS SHALL BE RAPIDLY COOLED, UTILIZING SUCH METHODS AS LIMITING DEPTH OF FOOD TO 4 INCHES OR LESS, AGITATION, QUICK CHILLING OR WATER CIRCULATION EXTERNAL TO THE FOOD CONTAINER [750.140]. NOTE: THE FOOD ITEM WAS DISCARDED, AND THE FOOD SAFETY MANAGER ONSITE, KATRINA CHAMP, DEMONSTRATED THE RIGHT KNOWLEDGE REGARDING PROPER COOLING METHODS. IMMEDIATE/ONSITE
